STANDARDS AND TESTS
There are two main ways of testing olive oil: chemical and sensory.
These are complementary procedures; both are necessary for a complete assessment
of olive oil quality.
Chemical analysis
Chemical analysis measures free fatty acid (FFA) and peroxide levels. FFA assesses the quality of the fruit before milling, and peroxide levels indicate whether the oil has been exposed to light or high ambient temperatures.
Sensory tests
Sensory analysis is carried out by expert sensory panels trained to recognize a series of positive and negative attributes. Panellists must indicate that it contains fruity aromas and detect no defects for it to be considered extra virgin.
